Here's a little sweet and sour experiment. Saucey meat with rice is one of my favorites. So here's what you'll need for this.
Sweet and Sour Pork on Rice
For pork and marinade
1/2 pound pork
2 tbsp ketchup
1 1/2 tbsp soy sauce
2 teaspoons Rice Wine Vinegar
1 teaspoon Yellow Sugar
1 tbsp flour
Other ingredients
2 teaspoons rice wine vinegar
1 1/2 tbsp soy sauce
2 tbsp ketchup
1/2 teaspoon Thyme
1/2 teaspoon Cinnamon
1/2 teaspoon Paprika
1/2 teaspoon Cumin
1 teaspoon yellow sugar
salt and pepper to taste
1 teaspoon cornstarch
1/8 cup Red Wine
1/2 White Onion
2 garlic cloves diced
1 large Scallion
2 stalks of Celery diced
For Sushi Rice and Mixture:
2 1/2 cups long grain rice
1 part water to 1 part rice wine vinegar
1 teaspoon white sugar
1/2 teaspoon salt
[Prepping Pork]:
1) Cut pork into 1 inch cubes and mix with marinade ingredients
2) set aside
[Prepping Sushi Rice]:
1) Cook long grain rice until done
2) Mix sushi rice mixture with rice and fluff up rice with fork.
[Final Prep]
1) Cook pork in hot pan until browned (set aside)
2) Fry onions in pork juices still in pan
3) Add Thyme, Paprika, Cinnamon, Cumin and diced garlic
4) De-glaze pan with Red wine
5) Once alcohol evaporates, add water to pan and dump celery in
6) Salt and Pepper to taste, cover over medium heat until celery is almost done
7) Add pork back to pan and heat through until everything is cooked
8) Mix corn starch with equal parts water, and mix into hot pan until sauce thickens
8) Serve over rice
9) Pig out!
I hope you like this. It is not your typical restaurant sweet and sour pork. For one thing I did not deep fry the pork, which I guess makes it a bit healthier as well. This version has a bit more complex flavors, with the cumin, thyme and cinnamon. It was enjoyable. And having the sushi style rice, made it that much more yummy. It made every bite that much more 'sweet and sour'.
Until next time, enjoy and rock on!
