Omurice...need to work on flipping skills

Pork Omurice

Is a modern Japanese dish, consisting of fried rice and omelette (usually with assortment of meat and vegetables). It is typically served with demi-glace sauce or ketchup over the omelette.

Here's what I used for 2 medium servings:

Ingredients
1 pound lean Pork diced into cubes
frozen vegetable mix (carrots, peas, corn)
1 large Scallion
3/4 cup Ketchup
1 tbsp Soy Sauce
1 Garlic clove
4 medium Shiitake Mushrooms sliced into thin strips
1 medium size White Onion diced
2 1/2 cups long-grained Rice
3 1/4 cups Water (roughly)
1 tbsp Olive Oil
4 eggs
Salt and Pepper to taste


[Prepping rice]:
1) Boil rice
2) Set in fridge until cold. Alternatively use day old rice.

[Prepping fried rice]:
1) Sear meat (salt and pepper,)set aside
2) Fry garlic, mushrooms and onions, cook until aromatic
3) Add meat back to pan, add 1/4 ketchup and coat meat
4) Add day old rice, or fresh rice (but make sure it is cold, so that it is easier to make fried rice)
5) Add soy sauce, and rest of ketchup and fry rice until rice separates from other grains.
6) Add frozen vegetables and stir fry until hot
7) Plate on serving dish
8) Fry 2 eggs per person (stir vigorously as shown in video) Take off heat once almost cooked through. You want it to still be a little bit under-cooked. The residual heat will finish the cooking.
9) Form into a nice shape and flip onto the rice on the dish. Put some ketchup over the omlette.



This is basically how the pros do it.

I am obviously not a pro :P At least it still tasted good. It's a nice and easy dish to make. The creamy omelette and ketchup adds a nice element to the fried rice. Try it out! Until next time, enjoy and rock on!
