Potato Soup and Roast Pepper/Onion spread Baked Potato Rounds on Toast

Here's a light lunch I prepared. Lots of flavors and textures in this meal. I hope you try it out:)

Here are the ingredients you will need to make 6 toasts and 2 servings of soup:

For Potato Soup
3/4 Large Russet Potato cut into bite size cubes
2 1/2 cups milk
1/2 cup Chicken stock
1 teaspoon flour
1 1/2 teaspoon butter
1 teaspoon Thyme
1/2 teaspoon Chili powder
Salt and Pepper to taste

For toast and spread
6 slices white bread
6 Potato slices 1/8 inch thick made from rest (1/4) of potato
1 Red Pepper diced
1/2 white Onion diced
1 Garlic clove minced
1/2 teaspoon Thyme
1/2 teaspoon chili powder
2 teaspoons Creme Cheese
1 tbsp plain Yogurt
1 tbsp Olive oil
1/2 teaspoon salt
1/2 teaspoon pepper
