Faux...Vietnamese style noodles...quick recipe

Ok, so I know it's PHO, but this was my imitation recipe because I did not have the proper ingredients to make authentic soup base.

Faux Pho

Pho is a Vietnamese noodle soup. It is usally served with beef(pho bo), or chicken (pho ga). Rice vermicelli noodles are used, and is often served with basil, lime, bean sprouts, onions, and peppers.

The soup base is usually made by simmering beef (oxtail, and other parts) or sometimes chicken bones as well. Other thins added are onion, cinnamon, star anise, ginger, black cardamom, coriander seed, fennel seed, and clove. However I did not have some of these ingredients, nor did I want to spend hours simmering stock.

So here's what I used for this recipe:

For Soup base
2 cups water
2 cups low sodium Beef Broth
2 tbsp Soy Sauce
1 tbsp BBQ sauce(...yes bbq sauce!)
1 tbsp Rice Wine Vinegar
1 tbsp Brown Sugar
1 teaspoon Thyme
1 teaspoon Cinnamon
2 large pieces of sliced Ginger
2 Garlic cloves diced
1 Large Onion chopped

For beef + marinade
1 pound beef
2 tbsp Soy sauce
salt and pepper

Other ingredients and toppings
1 Large pckg Rice Vermicelli
1/2 head of Suey Choy
2 Large Scallions
1 Lime
bunch of Cilantro
Bean sprouts

[Prepping noodles]:
1) Boil pot of water and leave noodles in until desired texture(shouldn't take too long)
2) Rinse with cold water, then strain...plate on bottom of serving bowl

[Prepping Beef]:
1) Slice beef very thin (if hard at room temp, put in freezer for 10 minutes, then try again)
2) Marinade with Soy sauce, salt and pepper

[Prepping Soup base]:
1) Bring water, and broth to boil
2) Throw in rest of soup base ingredients, except for onions
3) Bring to medium simmer for about 10 minutes
4) Dump in Suey Choy, Onions, and half of Scallions. When Suey choy is done cooking, take out Suey choy, and Onions. Salt to taste.
5) Place Suey choy and Onions over bed of noodles

[Prepping beef and final Assembly]

1) Put beef in a fine mesh sieve, and immerse in the soup base. (beef will cook really quickly since it is sliced thin) Do not over cook, unless that floats your boat.
2) Take out beef, and place over vegetables and noodles
3) Pour soup over bowl of noodles, and you're done!
4) Add bean sprouts, scallions, lime juice, cilantro, and sauces(hoisin, chili)as desired
