YO MEXICO! Pork flauta with mango puree dip

Flautas(which uses flour tortillas as opposed to taquitos which use corn tortillas) are a Mexican dish consisting of a small rolled-up tortilla and some type of filling, usually beef or chicken. The filled tortilla are then crisp-fried; or in my experiment, baked.

I made the tortillas from scratch, using white flour. I had leftover roast pork, so used that up as well for the filling.

Here's what you will need to make this recipe

For filling
1 1/2 cup diced left over roast pork
1/2 Onion
1/2 Red Pepper
1 Tomato
2 Garlic cloves minced
1 teaspoon cumin
1/2 teaspoon thyme
1/2 teaspoon Oregano
1 1/2 tbsp bbq sauce
1 cup water
1 cup Apple juice
Cream cheese

For Mango Dip
1 mango blended
1/8 cup plain yogurt
1 tbsp Mayonnaise
Parsley
Basil

For Tortilla skins
1 1/2 cups Flour
1/8 teaspoon Baking Powder
1/2 cup warm water
1/2 teaspoon Salt


[Prepping Dip]: (can be prepared ahead of time and refrigerated
1) Slice up 1 mango and puree in blender
2) Add rest of dip ingredients
3) Blend and set aside in fridge

[Prepping Pork filling]:
1) Fry Onions on medium heat until softened, don't burn
2) Add diced Red Pepper, cumin, oregano, thyme and garlic, cook until aromatic
3) Add tomatoes and cook until softened
4) Add pork, bbq sauce, apple juice and water
5) Bring to simmer, then leave covered for about an hour until most of liquid evaporates
6) Cook uncovered until liquid is all gone on medium-low heat (meat should be very tender)

[Prepping tortilla wrap]:
1) Mix baking powder, and butter into flour
2) Add salt into warm water, then pour into flour mixture
3) Mix until all combined
4) Take out of bowl and knead into a ball (about 2 minutes)
5) Set aside (covered in fridge for about 20 minutes)
6) Take out and separate into 8-10 equal portion balls
7) Dust counter and roll as flat as you can without tearing the dough

[Final assembly and baking]:
1) Pre-heat oven to 400°F
2) Put pork filling onto center of rolled out tortillas
3) Place some cream cheese over filling, then fold the skins of the tortilla around the filling to seal it

4) Use some oil to coat the outside of the folded tortillas and add some kosher salt on top if desired

5) Bake at 400°F for around 15-20 minutes or until the outside is done and golden brown.
6) Pig out!

I hope you enjoy this flavor packed mexican-style delight. It was crunchy, while chewy, cheesy, and sweet. Explosion in yo mouth!
