Cereal up in my Mac n Cheese!

Mc Cheese Yo

I like a little crunch in my Mac n Cheese. Didn't have any crackers to crumble, so I looked around in the cereal cupboard.

CRISPIX!! haha

So here's what you'll need:

Ingredients
1/4 cup crispix (crushed and coated with olive oil)
1 1/2 cups macaroni pasta
1 pound pork diced into cubes
1 large Scallion diced
Salt and Pepper
1 tbsp Cayenne
3 large Shiitake Mushrooms diced
1/4 cup fresh parmesan
2 teaspoons Olive Oil

For Cheese Sauce
2 tbsp butter
2 tbsp flour
1 1/2 cups cold Milk
1 cup Cheddar (medium, sharp...up to you)


[Prepping pasta]:
1) Bring water to boil, and boil macaroni until al dente. Drain and cool down under cold water(if making ahead of time) Set aside.

[Prepping pork and mushrooms]:
1) Rub cayenne, pepper, salt into pork, and leave in fridge for 20 minutes
2) Sear pork with some olive oil, set aside
3) In same pan, add mushrooms, onions and stir-fry until softened and flavors come out
4) Salt and pepper to taste.
5) Put meat back in, mix for 10 seconds, and set aside.

[Prepping Cheese Sauce]:
1) Make roux (melt butter in pan, and add flour...cook over medium low heat)
2) When flour mixture smells like pie crust, add cold milk and mix until thickened.
3) Simmer for 3-4 minutes, take off heat, and add 3/4 of Cheddar(mix until melted)

[Final prep and assembly]:
1) Mix pork/mushroom/onion with macaroni pasta, and pour into oven-safe dishware
2) Pour over cheese sauce and mix well until coated
3) Sprinkle remaining cheddar cheese over top
4) Sprinkle crispix crumbles over top
5) Finally sprinkle parmesan over top
6) Place in a pre-heated 400°F oven for 45 minutes to 1 hour. (depending if you are starting with cooled pasta or not)
7) Enjoy!
