Orange Balsamic Glaze Snapper

Still had some snapper left in the fridge. So I decided to finish it up. I tried to make a fancier looking plate this time.


Orange Balsamic Glaze Sauce:
Ingredients:
1 small Orange
1/2 cup Orange juice
1/2 cup water
1 teaspoon Balsamic Vinegar 
Parsley minced
2 teaspoons Brown sugar
1 slice Ginger
small knob of butter


[Prepping Sauce]:
1) In saucepan put orange, ginger, and parsley. Cook down orange until it starts to pull apart
2) Add water and juice and bring to boil, brown sugar, simmer for 5 minutes.
3) Puree mixture in blender, and strain liquid back into saucepan. Discard solids.
4) Bring to simmer/boil and add knob of butter until all melted, and sauce becomes smooth and smexy ;)
5) Serve over light white meat type of fish. I used a pan-seared snapper, but it would be nice over halibut and many other types of fish I think.
6) Enjoy!

Such a light, and healthy meal. Even if you're not a huge cooked fish fan, you might enjoy it. The sauce is so yummy!
